Yums for your tums

With all the amazing food I ate on my Summer trip to Europe, I must say that one of my favorite meals was from a Mediterranean restaurant in Rome. Ever since then I’ve been craving that cinnamon spice taste. So tonight, when I came home to find that any remaining dinner was fed to the dogs, I had to come up with something for myself. It was a little makeshift, but it was really delicious. Here’s my recipe:

1 Large red potato, chopped

1/3 White onion (About 1/2 cup), chopped

1/3 cup Peas, frozen

1 can Stewed tomatoes

1/4 tsp Cinnamon

1/4 tsp Cumin

1/4 tsp Allspice

1/2 tsp Black pepper

1/4 tsp Cayenne pepper

1/4 tsp Ginger

1 bag Uncle Ben’s Brown Ready Rice

Mix the potatoes, onions, stewed tomatoes, and spices in a saucepan on medium-low. It will start to boil, so let the potatoes and onions soften in the juice of the tomatoes.You might want to alter the amount of spices in your mix, to taste. Cook up that rice in the microwave (or make your own rice, if you want to get all uppity about it). Serve the veggie mix on top of the rice and voila! You have yourself a delicious, faintly Mediterranean meal!
